Small amounts of grated cheese should be used immedi- ately. When preparing large amounts, follow these simple steps to ensure best results.
When storing cheese for later use, generously sprinkle with corn flour to prevent it from caking together.
Use your hands to evenly distribute the starch amongst the grated cheese. Ensure that all cheese strands are lightly covered; if necessary apply more starch.
Store the grated cheese in plastic containers, while making sure that these are free of odours which could contaminate it.
Use click-lock containers to ensure airtight storage. Grated cheese should be used within 2 – 3 days after grating and consistently remain well-cooled at no more than +4°C
