Preparing a Ganache for Filling

Step by Step

Heat the cream.

Bring cream to a boil, then reduce to low heat.

Add chocolate.

Stir in chocolate chips or chopped chocolate.

Melt and mix.

Stir until smooth and glossy.

Cool the ganache. Transfer to a bowl, cover, and refrigerate until set but not solid.

Rest and beat. Remove from refrigerator and let it rest for 30 minutes at room temperature, then beat gently with the paddle attachement.

Beat briefly at high speed until the cream has a light brown, creamy consistency.

Adjust consistency. Whip longer for firmness (e.g. good for filling), shorter for spreadability (e.g. for covering cakes).

Fill into a piping bag.

Use a piping bag to fill pastries or frost desserts.

Finish with flair. Dust or garnish as desired.
