Step by Step

Cook the vegetables. Boil until tender, then drain.

Add cream and blend.

Heat briefly and purée thoroughly with a hand blender.

Blend until smooth, keeping blender submerged.

Strain for finesse. Pass through a fine-mesh sieve with a sputala to remove any vegetable residue and achieve a smoother texture.

Repeat if needed. Clean sieve regularly for best results.

Reheat and plate. Warm gently and serve as a base.
