Whether you serve it in a bar, restaurant or hotel – the famous chili cheese burger will always be welcome

Ingredients

Quantity Unit Ingredient

For the Meat Patties:

2 onions 
neutral oil for frying 
1.6 kg minced beef (fat content 20%)
3 tbsp ground mustard seeds
3 tbsp ground paprika seasoning 
1 tbsp garlic powder
3 tbsp freshly ground pepper 
5 tbsp ketchup 
2.5 tbsp salt 

For the Chili Cheese Sauce:

50 g Oldenburger Butter, unsalted 
50 g flour 
500 ml vegetable stock
250 ml Oldenburger Chef's Cooking Cream 20% fat, UHT, 1kg
750 g Oldenburger Emmental 45% fat i.d.m.
10 tbsp jalapeños 
5 hot chilis

For the Burgers:

10 burger buns
10 leaves lettuce
salt 
ground black pepper

Preparation

Peel the onions and dice finely. Wash the lettuce, pat dry and cut in stripes. Grate the Oldenburger Emmental and cut the jalapeños and the chilis in very small pieces. Preheat the oven to 180°C. 

The Meat Patties 

Fry the diced onions in hot oil until glassy. Mix together the minced meat, ground mustard seeds, paprika seasoning, garlic powder, freshly ground black pepper, ketchup, salt and the onions. Divide the mass into 10 equal parts and form the patties. Heat the oil in a pan and fry the patties from both sides for about 5 minutes. Put them into the oven for approximately 10 minutes. 

The Chili Cheese Sauce 

Make a roux from Oldenburger Butter and flour. Add vegetable stock and Oldenburger Culinary Cream and mix well. Add the Oldenburger Emmental, jalapeños and chilis and put everything together in the mixer, season with salt and pepper and mix until a homogeneous mass is obtained. 

The Final Touch

Halve the burger buns lengthwise and roast them on the grill. Now put the burger together layering freshly roasted bun, crisp lettuce, succulent meat patty and the delicious creamy chili cheese-sauce. Serve with a small wooden skewer to keep the burger perfectly layered.

01. How long the patties need to fry depends on their size. If they are small and thick, they need more time in the oven.

02. Real Cheese has excellent melting characteristics and can be used for gratinated toppings very successfully. It also binds ingredients when melted as in this recipe giving flavour at the same time. 

03. Cheese is made from fresh cow’s milk with no added flavourings. It is a highly valuable grocery and part of a health conscious diet. Cheese is an excellent source of protein.

04. If you prefer a richer, more buttery flavor, you can fry the meat patties adding butter only to the frying pan. Fry at medium temperature from all sides with a lid on the pot.
