How can I prevent coagulation of cream in a white wine sauce?

First of all you should use a cream with more than 30% fat. As from 30% fat the protein is protected by the fat – so it cannot flocculate. We developed our Oldenburger Chef’s Cooking Cream with some stabilizers to protect the protein from the alcohol and heating, so you can use it with only 20% fat.
